Super simple beans on seeded bread – serves 3-4

Like all beans cannellini beans are a nutritional powerhouse, they are packed with fibre and protein as well as containing various vitamins and minerals. As tinned baked beans are often loaded with sugar, I made up my own version - ready in minutes and served on a chunky slice of seeded wholemeal or rye bread. It’s a great way to kick start your day!



What you need:

2 tbsp olive oil

1 garlic clove – crushed (use a garlic crusher if you have one) or finely chopped

OR half a teaspoon of garlic granules (if you are in a hurry)

1 tin of good quality chopped tomatoes

1 tbsp tomato puree

1 tin of cannellini beans

2 tsp date syrup

2 tsp dried oregano/ dried Italian herb mix

Salt to taste

4 slices of seeded rye or wholemeal bread – toasted (optional)


How you do it:

In a frying pan heat up the olive oil.

Turn down the heat and fry the garlic for 30 seconds.

Add chopped tomatoes, tomato puree, date syrup and cannellini beans and -stirring occasionally - simmer for 5-10 minutes until it starts to thicken up.

Season to taste with salt and oregano and serve on your choice of bread.
